Important perhaps meaning either the definitive one in their genre or in their breakthrough new style, or...whatever???
Hell, be a name dropper if need be!
Off the top of my head, and all in Wisconsin....my top 3...Saw Segovia, Montoya, Hendrix.
Also Van Halen's first time out (opening for Journey/Montrose), sadly I'll include the ill fated SRV concert at Alpine Valley, and my most memorable concert was John McLaughlin with the Mahavishnu Orchestra ( perhaps THE most intense music I've ever heard live). There's more, but those IIRC were the big ones.

Eric Clapton 3 times. Santana once. FZ twice. Eric Johnson once (not a good concert). Been to quite a few concerts, these seem to fit the topic.

I saw the Beatles in 1966. That would be George and John on guitar, their new Epiphone Casinos, with one song featuring George on his Ric 360-12 new style.
Saw McCartney twice in the twenty-teens. He plays guitar in addition to bass. LH Les Paul.
Speaking of Les Paul, saw him in 2007 at the Iridium Club in NYC.
I'm probably leaving someone out. I've only had one cup of coffee.

Other than many of the rock gods of the 60's and 70's, I particularly enjoyed seeing Pat Metheny on his "Travels" tour. His early stuff is my travelin' music. I've also seen Larry Carlton back in the days he still had hair.
One guy I would have liked to have seen live is Joe Walsh.

I think my 2nd concert ever was Clapton in 75 and Santana was the opening band. I swear it pushed Clapton to play a bit prouder because he was on fire. I've seen Santana at least 3 times, the 2nd being an outdoor affair in East Lansing, MI. A storm blew through and Carlos was doing a call and answer schtick with the thunder. Cool memories.
