Simple pasta recipe
1 egg, beaten
1/2 teaspoon salt
1 cup all-purpose flour
2 tablespoons water
In a bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water. On a lightly floured surface, knead dough for about 3 to 4 minutes, roll dough out to desired thinness, cut into strips of desired width.
I use my kitchen aid, I also have the pasta roller and cutter attachment for the mixer.
The best way to knead the dough is after it becomes homogeneous roll it out, fold in thirds and roll it again, do this until it comes all together and is elastic. I fold in thirds and run it through the pasta roller on the Kitchen Aid, it goes pretty quick even with the hand operated pasta roller. It can be dried and stored like the store bought stuff.
