This recipe has won 7 best of show awards, 6 for me (about 20 entries) and one for my niece (about 35 entries). It's very good and, with ground beef instead of cubed beef makes outrageously good chili dogs. If you don't like your chili thick and meaty, you can add some tomato sauce, but you need to add more spices to maintain a similar flavor profile.
Ingredients: 1 14.5 oz can Italian stewed tomatoes (diced) 1 15.5 oz can Petite diced tomatoes 1 6 oz can Tomato paste 1 14.5 oz can Rotel (regular or hot, depending on desired heat) 1 14.5 oz can Mrs. Grimes Hot & Spicy chili beans (do not drain) 1 Onion 2 stalks Celery 1/4 C White wine (I use whatever chardonnay or Chablis we have around) 1 pinch Crushed Red Pepper Flakes 1/2 C Bell Pepper (diced) 1/3 C Lea & Perrins steak sauce 1/2 lb Thick cut bacon (cooked crisp) 1 lb Sausage or Italian Sausage 1 lb Cubed Beef (I use stew meat or cut up a sirloin or ribeye) 1 pkg chili seasoning mix 1 tsp Ground cumin 1 tsp garlic (or crush a couple fresh cloves)
Directions:
- In a large pot, cook bacon crisp and remove to a bowl.
- Add celery, onion and bell peppers and saute in bacon grease until tender, then remove to a bowl.
- Turn up heat, add garlic and steak and sear to medium rare in bacon grease, then remove.
- Brown the sausage, then drain the grease.
- Add all remaining ingredients, meat and vegetables. I like to add the wine first to deglaze the pan, then add other liquids & spices, adding in the previously cooked meat and vegetables last.
- Simmer to blend flavors, then enjoy

Wow . thanks ,this is the recipe i was looking for. every time i mention that i wanted to try cooking chili and told my wife; she would cook her own recipe Not to say it was not good but lacked a lot of things and i am glad to see this. Thank you Slacker. OH By the wa i was not here

I'm going to have to try that recipe, it looks it's going to be delicious ! To be honest, I was worried about putting the steak sauce in. I mean, chili was steak sauce?? Never knew it was in there and make sure to use the Lea & Perkins. Have fun!!

As I re-read this thread I realized that I never said how it turned out.
I only make one change and that was adding 2 pounds of ground round. The result(s) were so good!! I've made it 3 times since my first post on this. Thank you so much!!
