Not a lot of time to cook dinner?
Just get some boneless chicken tender breasts, or whole boneless chicken breasts cut in 1/2 or thirds.
Put a good amount of quality evoo in a saucepan/skillet [don't skimp, at least 1/8" in bottom of the pan] add the chicken and flip over to coat in evoo
Sprinkle some salt, fresh cracked pepper and dried oregano flakes on each side of the chicken [you can use regular pepper and skip the oregano if you like]
Chop a couple cloves of garlic and add to the pan in the oil [not on top of the chicken, you want it to cook in the oil to flavor the chicken] you can also cook the garlic in the oil for a couple minutes before adding the chicken but don't brown it.
Squeeze 1/2 a fresh lemon over the chicken, cover and saute on medium low or medium, flip the chicken once you see the edges turning white.
I like to serve w/rice and pour the excess oil and garlic over the chicken on the plate, you can sop up the oil w/the rice as you eat [at least that's what I do]
