Nobody mentioned "Satisfaction"? I guess we have all heard it 'way too many times and have grown tired of it.
Great opening riff. But if we are talking opening riffs, I think of "Jumpin' Jack Flash." It's hard to beat.

Of their famous songs, I'd probably pick (in no particular order) "Satisfaction," "Only Rock and Roll" and "Gimmee Shelter."
Among the album tracks, I love "Turd on the Run" and "Ventilator Blues" from Exile, "You Got the Silver" off Let It Bleed and "Parachute Woman" and "Prodigal Son" off Beggar's Banquet.

I've always loved those acoustic guitar chords toward the end of "It's Only Rock and Roll."

For in the car, drumming on the steering wheel, "Satisfaction." Good sing-along song. The best opening riff, "Start Me Up."
My old band used to do "Dead Flowers." Great song, and I seriously think we did it better than the Stones.

Too many to just choose one, but from a guitarist perspective I love to jam along with the live version of Midnight Rambler. The amount of variation Keith does with those same three chords just goes to show why he truly deseves the "Human Riff" moniker.
