Here's some I made. These are slow cooked chicken breasts in a crock pot with spices, and green sauce. Topped with a few drops of Dave's Ghost Pepper sauce, and drenched in Malinda's Mango sauce. Attachments:

Fajitas with lime juice are neck & neck, if not slightly in the lead, IMHO.
Not that I have anything against tacos...
(someone had to stir up some controversy)

I picked up my wife late from the airport yesterday and on the way home we both decided we felt a little hungry. So we stopped at Taco Bell and picked up 6 tacos, 4 of which I ate.
I thought about posting this in the "what's for dinner" thread, but this one feels more appropriate.

I'm a fan. There is almost no such thing as a bad taco, even at places like Del Taco or Taco Bell (so long as you lower your expectations). But I'll take 'em crunchy or, preferred, street tacos. My personal favorite is a carnitas street taco with chopped onion and cilantro.

Aren't Fajitas technically tacos? They are always served in a small tortilla. I'm certainly no expert on the taxonomy of Mexican cuisine, but I believe that tacos and fajitas are are actually two separate species, though they may share a common ancestor...

Fajitas are *usually* served with flour tortillas and tacos are *usually* made with corn tortillas.
But then, there are those who think there is such a thing as a 'vodka' Martini...

Then, unique to themselves, is Tito's in WLA. You either get Tito's or you don't. When I lived in WLA, Tito's was our go to place. In those days, tacos were 35 cents or 50 cents with cheese. More dinero now but if I'm in SoCal, I will go out of my for a few. Yelp describes the love and hate that Tito's generates. I’m pretty certain ‘fajitas’ is simply describing the style of marinating and grilling the meat. Which can certainly be used as the basis for a ‘taco’. At least that’s what our local Mexican grocer tells us.

I'll take my tacos in pretty much any way imaginable. Carnitas, Chicken, Carne Asada, Shimp. You name it. As long as it's properly prepared the with the right seasonings and lime. It's all good.

Best taco I ever ate was in Tecate Mexico from a street vendor who’s cooking rig consisted of a tire rim to hold the coals and a sheet of aluminum for his grill surface. They cost us $0.50 each and my buddy said that the guy probably charged us an inflated gringo price at that amount. Like I cared - those things were mucho excellante!

It seems like most mexican food is the same dish, just presented in different form factors.
My wife makes wicked good white sauce chicken enchiladas...when I can get her to use corn tortillas. The flour ones get kinda rubbery IMO, plus I like the corn flavor.

Speaking of corn tortillas and street tacos, My usual breakfast is a couple of eggs and either an English muffin or small white corn tortillas which get heated up and topped with a little shredded cheese (a Kirkland Mex blend we keep for quesadillas) and scrambled eggs with chives. Topped with a green taco sauce. That's what I had today, three little scrambled egg street tacos.

I always opted for the Double Decker Taco Supreme when I went to a Taco Bell. I liked the idea of having a hard shell inside of a soft shell, to keep things together. The last time I tried to order one, they said they didn't have them any more. I've never been back to one since, even though I don't know if that meant all Taco Bells, or just the one I was at that day.

But there’s a ton of Mexican food that doesn’t simply throw a protein, some cilantro, and a salsa...onto a tortilla of any type. - Ceviche - Whole grilled fish like Snapper - Rellenos (stuffed poblano pepper) - Cochinita Pibil (marinated pulled pork slow cooked in a banana plant leaf wrap). Top 3 dish for me. - Whole spatch c...ocked grilled chicken (really? A filter for c...ock???) - Barbacoa Just to name a few. Virtually none of these find their way onto a taco/tortilla. (Though a local favorite place throws Cochinita Pibil onto a tortilla and calls it a ‘taco’. Lol. Fantastic for only $2.99)

Welp. I convinced myself to stop off on the way home from work and pick up a bag at this authentic Mexican joint near where I live. I will opt for the hard shells.

Small soft corn tortillas, no cheese, no lettuce, no "taco sauce", almost always with fresh lime and cilantro and filled with carnitas or carne asada or pollo asado or "al pastor", ---I have yet to try the tripe!---everything grilled on a flattop and fresh and wonderful, sold from a truck in a convenience store parking lot by a smiling man who speaks little English, if any. The price has doubled from $1 each to 2$ over the last few years, but still a screaming bargain. The above sounds like I'm describing a particular establishment but there are dozens of them, all over town, and they all fit that description.
