A friend of mine is very well off and throws great parties at his place. He gets some really excellent bands as well. He also always has a taco truck show up. Something about good booze, music and tacos can't be beat.

Good old fashioned ground beef and cheese in a hard corn shell. I could read a ton of those in a sitting back in the day. I don’t know, JD. I believe any ground beef is a gringo/Tex Mex adaptation. I’ll ask my Mexican friends. Cheese is definitely a no-no for an authentic Mexican ‘taco’.

Torchy’s is pretty freaking great. We’re blessed to have one in the next ‘real city’ over. 👍👍 Their queso is incredible too.

It seems like most mexican food is the same dish, just presented in different form factors. I ‘get’ that perspective. But there’s a ton of Mexican food that doesn’t simply throw a protein, some cilantro, and a salsa...onto a tortilla of any type. - Ceviche - Whole grilled fish like Snapper - Rellenos (stuffed poblano pepper) - Cochinita Pibil (marinated pulled pork slow cooked in a banana plant leaf wrap). Top 3 dish for me. - Whole spatch c...ocked grilled chicken (really? A filter for c...ock???) - Barbacoa Just to name a few. Virtually none of these find their way onto a taco/tortilla. (Though a local favorite place throws Cochinita Pibil onto a tortilla and calls it a ‘taco’. Lol. Fantastic for only $2.99) Agreed. Those are not on many people's short list of mexican foods. Of your list, I've had one item (Rellenos).

But I love 'em. I enjoy authentic and creative taco variants, but that old fashioned Taco Bell crap I grew up with just hit the spot.

Oh we make American tacos at home, with ground beef and shredded cheese, sauce, etc. But we also hit the taco trucks when out. The two dishes are both worthwhile but need separate names.

They are what my 9 year old granddaughter demands for supper every time she eats here.
Love to have her come over.
Starting to hate tacos.
