If I had to describe it in one sentence, I'd say it's like a stronger funkier Swiss. I mean funky in the best possible way, LOL It's definitely a strong flavor, if that's not your bag then you probably wouldn't like it. Great with crackers! en.wikipedia.org/wiki/Manchego

There are so many kinds of Cheese - Over the years I've done work for Specialty Cheese in Reeseville, WI and live nearby. They stopped trying to compete with the big guys and make several lines of ethic cheeses. Their Hispanic style cheese is fantastic. website: Specialty Cheese

Most of what is labeled Manchego in the States is not the real stuff -- it's made from pasteurized cow's milk rather than sheep's milk.

The stuff we ate last night was Viejo (aged 12 months) from Spain. I wasn't aware that there is fake stuff out there, thanks for the heads up. FWIW, to be called Manchego it HAS to be sheep milk and made in Spain. According to wiki, so take that with a grain of salt...

Aged manchego (8 months min) served with honey for dipping (Mediterranean style) with some grapes and cured meats is my go to appy

Funny, doing a short trip and stopped in Round Top, TX. Little cheese shop and I mention to my wife about this thread. I couldn't remember the name of the cheese and look it up. First cheese I look at is Manchego.
