Seems that the more "advanced" my iPhone operating system becomes, the less I can do with it. I get left in the dust, trying to do the simple tasks I learned before the last update. For instance, I'm constantly in the wrong mode when I try to take a photo. And what happened to my photos? What genius at Apple decided that I would really love to wade through categories and dates to find the photo I'm looking for? My wife has to show me how to get out of endless loop situations that I accidentally triggered somehow. Film clips I made myself no longer play. The more I tap on the play button, the more often I get asked, "do you wish to delete this clip?" I wind up looking at screens I've never seen before, with a dozen choices ..............
I'm not a Luddite (no, really!), but I feel like I just got behind the wheel of my familiar old car and found everything changed around (to make it better). Oh, you want to adjust the rear view mirror? Get your hand off it, Bozo ... you have to find the "adjust mirror" setting using one of the new electronic stalks growing out of the steering column. Your speedometer is now registering KPH where you want MPH? There's a setting for that. Somewhere. Everything you could possibly want to know is right there on your "info-tainment" screen ........ but don't look at it! That's hazardous! That's why we keep putting warning messages on it that say, Do Not look at this screen.
Even the familiar screen for my Firestick on the TV machine has changed. Everything has been rearranged, with a hearty invitation to tell Alexa what I want to do. Except that the Alexa on my Firestick is apparently having a sibling rivalry with Alexa on my Echo device. It gets really dicey when the two of them start to interact at the same time in my living room, when I call out her name.

My IT friend is saying iOS 15 needs to bake a little longer - he advised holding off a few weeks, possibly even until 15.1. I have a new iPhone 13 Pro coming, so I’m not bothering to update my old iPhone 7.

Gato, I'm with you brother.
If I touch a given app, I do so because I want to use that app ... not look at some menu pertaining to that app.
Like you, I needed to take a quick photo the other day (of a car leaving what appeared to be a hit and run). Does my camera come up? Nope I get some freaking loop. By the time I get to camera the car is long gone.
Queenie later showed me how to get to camera without even opening the phone. Which I suppose is good, had I known it an hour earlier.
One of my motos in life has always been: *When in doubt, simplify*. The World of technology does not buy into that thinking in the least.

Consider the panic you feel when you pat down your cargos and realize your phone is not on your person. Even if ends up being 3 feet away on a countertop or slipped between the cushions, the urgency seems to peg somewhere near that of the deep sea diver who sees his detached air hose floating to the surface. It struck me we've lost our minds with these devices when I saw the video of the guy standing at the entrance of the Boulder Colo supermarket, preoccupied with his phone and presumably texting someone "OMG, someone's shooting up the place". Then there was the person who was videotaping him. Based on the delays at green lights I'm fairly confident a large percentage of drivers absolutely must check their phones at every traffic light and finishing their task, be it reading or sending a text, before tuning back into their actual environment.
I came from a tech working world and constant change, "sharpening the saw", updates, new platforms were a way of life. But that was a job that dropped a paycheck in my bank account every 2 weeks. We've voluntarily taken on this convoluted way of life and it has changed our species. Maybe we have already experienced the Singularity and we're all just suspended in it's event horizon, too preoccupied with the glowing rectangles to have noticed.

My wife's iPhone seems to have defaulted to "live" mode for taking pictures. We both hate that. A still picture should be just that--a still picture. Not a short movie that freezes after a half-second.

I undated to 15 on my 12 Max Pro last night. So far, so good.
I struggled a lot with Android updates when I lived in that world a few years ago. Holy crap they could hide some stuff on you!
In comparison I use Apple products pretty well and they don’t leave me confused.

My wife's iPhone seems to have defaulted to "live" mode for taking pictures. I too had that problem. There is a way to turn that off. It does seem stupid to me that one needs to be burdened by something so silly. I have no clue why we would want a feature like that. Edited to add: I did take a PIC of our Shi-tzu Ash a while back with that live mode still activated. Ash licked her lips just as I snapped the PIC. It's pretty cute.

It's unfortunate that you have to know and remember so much to get around on tech devices these days. If you grow up with the technology, you don't realize how much knowledge that you slowly accumulate. For a big dose of frustration, try to explain to a noob how to do something without needing to explain the underlying stuff like directory/folder structures, keystrokes and mouse gestures.
I have a SIL that knows just enough of her computer to upload pics from her camera and post to EBay. For anything else, she is clueless. If she hits a wrong key, she doesn't know what happened or how to recover. I can't help her over the phone because she doesn't call anything by it conventional name and I can't figure out what she is talking about. Standard procedure now is that if she needs any help, she has to bring the computer to my house so I can put eyes on it. She has the same problems with her android phone, but since my android knowledge is minimal,at least it is my BIL that helps her with that.
This stuff is so complicated and customizable. It took me less work to understand and manage a late 1980's Digital VAX minicomputer with 40 terminal users.
Lack of decent documentation doesn't help. The VAX had 6 feet of looseleaf binders of documentation. Yes it was a lot, but it was cohesive, well-indexed and all in one place.

We've voluntarily taken on this convoluted way of life and it has changed our species. I will quickly admit that technology has changed many things in life for the better. However, I firmly believe many in Silicon Valley are making things up that are useless to the vast majority (and in some case maybe useless to anyone) in a pure effort to demonstrate how smart (they think) they are.

I believe we all have a personal decision to make. That being when to get off the merry-go-round. Things move past us and are embraced by some while others are left behind. That’s progress. It’s just that we aren’t always on the progress bandwagon as we grow older. Of course… Not all change is progress. - A. Maslow

A corollary to the iPhone debacle:
My egghead brother can turn the simplest explanation into a mind boggling language train wreck, by heaping 50 cent words into the sentence. Because he knows the words, and dang it ... he just feels superior sticking them in there. Like an Apple OS designer, rejiggering the iPhone. Are they actual words? Yes Do they help or simplify the explanation? No
"Inasmuch as your perception is juxtaposed to the majority postulate in this particular instance, or framing of the idea ......" (my bro) "You have a different opinion ..." (me)

It seems like I am almost always using outdated tech. My main desktop computer is still running Windows 8.1 and as long as it still works I'm not switching. My shop laptop is still running Windows 7. My wife's laptop has Windows 10 and I can get around in it just fine. My phone is a Samsung Galaxy S9+ and as long as I can send and receive text messages, make phone calls, store notes, take photos and sometimes videos, occasionally access the internet, and the battery will hold a charge, I'm not changing that either.
The recording software I use is old as well but it still has gobs more capability than I know how to use so I'm not upgrading that either. Everything is working just fine so I don't need the latest and greatest upgrade every time it comes out.

It might be interesting to have some tech company join the "simplicity" bandwagon.
Produce a product (in this case phone) embracing and marketing around that premise ... see how it sells.

I used to work with IT guys in major corporations on networking issues with office equipment. These days I have problems with my TV remote. Okay, you just mentioned another of those genius gadgets. The TV remote. I just did a count on mine: 34 buttons. How many do I use? About 6. Of course there is the other extreme: my car stereo has a half dozen buttons, but they are "multi-function." I have to bring my pet octopus out to the car. Why? Because to accomplish anything, two or three buttons get pressed together, while tapping another one up or down, according to the arrows, to bring up various menu screens which require pushing other buttons. And if you get lost in the labyrinth of choices, it's game over, pal. Back to square one.
