The "more symmetrical" headstock idea looks to me like the cheap Aria Pro II etc of the 80s honestly - it's not really distinctive and seems "generic" in my mind.

Is it still policy that after a certain amount of time on staff, you are able to choose a guitar to be built by the team for you? I had heard that was a thing @ PRS, and have also heard stories of some pretty wacky stuff coming out of the shop.

At the two-year point you can spec and order a guitar at cost of materials; it is substantially cheaper than wholesale. The same goes for increasing intervals of tenure at the company. And yes, there have been some wacky guitars made. Super-custom stuff outside of the normal production model spec adds cost. Management encourages employees not to 'flip' the guitar within two years. They can't stop a person from doing that, but most all folks comply with that.
