Slather with olive oil. Prepare a rub of 1 tsp each of black pepper, crushed red pepper, onion powder,garlic powder,smoked paprika and 3/4 to 1 tsp salt. Rub mix on loin, cook 10 minutes in a 400 degree oven. Lower temp to 350 and cook 20 minutes per pound. Internal temp should be 145 when you take it out. Cover in a tin foil hat for 10 minutes. I recomend checking meat a few minutes early, just in case. This came out tender and delicious for us.

The place we order lunch from often has typos on their menu, and we are always laughing when they have Pork Lion.
Yours sounds like nothing to laugh at, and is on the "maybe" list of things I might cook after work today.

I hope you try it. I was blown away. Recipe i started with said to warm to room temp, by the time you oil and make the rub and rub your loin (you know)..well there you are. Cook with fat side up. Everybody knows that. I had those details in the post till the system farted and I had to try again. We will be look for attractive loins tomorrow so we can do it again.
