I just saw this. First it sounds like smaller acoustic guitars to me. Probably not a dreadnought or other large type. Close miked with some kind of condenser mic(s) and double tracked. Likely recorded in a good sounding acoustically treated room. Then split pretty hard left and right with just a little overlap in the panning. It also sounds like both guitars are using a capo. It's in Ab so perhaps at the 4th fret. No bass notes played on the guitars every go lower than Ab. Each guitar is just a smidge out of tune with the other. Maybe not all of the strings but some of them. That makes for a very pleasing and wide guitar sound.

Don't know if this performance offers any insights. Pretty dynamic song melodically speaking for a I-IVmaj7-V structure.

Listened to the original. Yep, hard left and right panning on both acoustics and harmonies. I can't tell if the harmonies are doubled at any point but they often do emphasize the maj 7th of the IV chord.
A common thing that I have done (probably too much) is to double harmonies panned left and right. Also panning acoustics left and right with one being capo'd up to a different inversion. Kinda gives it a wide 12 string effect.
