Hi! Here is a recipe from Mom:
Lamb Shanks- 4 servings
4 Lamb shanks (about 3 pounds)
1 large onion, chopped
1 clove garlic, minced
1 cup water (for lamb)
1/3 cup white wine
1 tablespoon lemon juice
1 teaspoon salt
1 bay leaf
1 tablespoon flour (or corn starch)
1/4 cup water (for gravy)
Brown lamb in skillet; push to one side. Add onion and garlic; saute' just until soft. Stir in 1 cup water and wine, lemon juice, salt, and bay leaf; cover.
Simmer 3 hours, or until very tender. Remove meat and keep hot. Blend flour with 1/4 cup water; stir into liquid in pan. Cook, stirring constantly, until gravy thickens and boil 1 minute; remove bay leaf. Serve gravy in separate bowl.

Mmmmm, lamb shanks. I'll simmer/braise them with a can of tomatoes (size optional), onions and *plenty* of garlic, maybe toss in a cup or so of lentils. Simmer 3 hours, or until very tender. ...until they pretty much fall apart. Over noodles.

I love lamb shanks -- I like the Greek style in the tomato sauce over rice, but I'll have to try RDR's Mom's version.

I don't believe I have ever had lamb shanks so this sounds worth a try. Every time I have cooked lamb, it has disappointed me to some extent. Slow cooking might be the ticket.

They are hard to ruin.
Most folks that don't like lamb have had over cooked leg of lamb, which isn't ant good. Lamb chops are the bomb.
