Everyone tells me I make really great guacamole. Not that there’s much to it, but here goes:
3-4 ripe avocados 2 tablespoons finely chopped red onion 1 seeded and finely chopped jalapeño pepper (two if you want it extra spicy) 1/2 tablespoon finely chopped cilantro leaves Juice of 1/2 lime Kosher salt
Cut your avocados in half. If you don’t know how, cut them longways around the pit, then hold the two halves and twist. One side will have the pit. Tap the pit with your knife and twist to remove it. If very ripe, the pit may just come out with a gentle squeeze.
Scoop out the avocados with a spoon and place into a bowl. If you like your guacamole chunky, reserve one avocado, dice it, and set it aside.
Add the onion, jalapeño, cilantro and lime juice. Add kosher salt to taste, one big pinch is a good start.
Mash everything together with a fork to your desired consistency. Taste it and add more salt if desired. If you saved the diced avocado to make it chunky, gently stir it in.
Put it on almost everything, it’s delicious.
It’s all about what you like to me. If you want more red onion, go for it. Hate cilantro? Leave it out. I’ve never been one to add tomatoes, some slaw eat by them. Give it a shot if you want. The absolute key to good guacamole is the avocados being ripe. If they are under ripe, the rest doesn’t matter, it just won’t be right.
Don’t buy pre-made, packaged guac. This stuff will absolutely destroy it.

I love Avacadoes and Guacamole but now after having my Gallbladder removed I can not longer eat them or they will do a number on me

Yep - that's a good one.
Mine's not much different. I would add a clove of garlic and a shake of cumin and smoked paprika or half of a chipotle. I use a molcajete and grind the garlic to a paste along with the spices and salt. The avocados go in next and are chopped up with two large spoons -- then add the remaining ingredients. I usually go heavy on the cilantro.
I like mine chunky.

Mine’s the very basic form, very fresh and clean. Some cumin and some paprika, though, I can see that working. I’ll have to give that a try.

I'm a big home made guac fan; we had a big '1 year post diagnosis screw you cancer' party in April last year, and made heaps of food for about 100; tried our hand at making dips - guac, hummus and tzatziki. Since them life's been a constant search for nice ripe avocados, I can't get enough of it! Make at least once a week, maybe every other day if avocados are good and cheap. I've gradually taken over the from my wife, and simplified the recipe, cutting out the onion and tomato, just adding lime juice, olive oil and a pinch of cumin and paprika; maybe add a crushed clove of garlic and chilli if it's just for me. I had to look up cilantro - it's called coriander over here? I tried the dried version a few times and didn't think it added much, but I'll have to give the fresh leaves a try - thanks!

I saw an article a little while back about guac recipes used by Vincent Price and Boris Karloff. One of them had worcestershire sauce and the other had mayo in it. I thought the mayo was weird. I just bought some avocados today. I may make guacamole with cream cheese in it (I have a recipe book and this is one that caught my attention).

I accidentally bought extra avocados this week. My wife left them on the grocery list despite the fact that she ordered them online from our produce delivery dude. Which of course, is my fault.
So I see more guac in my future.

There is a restaraunt in the area that has a guacamole cart they will roll right up to your table and make your guac on the spot. Kinda cool.

We have the same in a local place called Plaza Azteca. Great for the customer but not sure it's a good idea for the business. After you stuff your mouth hole with guac and chips -- who's going to want to order a full Mexican dinner?
For the record, I do. But that's just me.

I never understood the appeal in the premade guacamole. I didn't see a problem with it until the first time a waitress made it fresh on a cart next to our table. Absolutely no comparison. About as bad as canned Tamales vs. Fresh made. Well maybe not nothing could come close to how horrible canned Tamales are when they look like they are swimming in thin oily "blood sauce"
