I've been known to eat raw celery, undercooked carrots, and even rare beef. But I have never been a fan of eating raw fish. I don't care if it's called "California Roll," "Spider Roll," or "Sashimi," it's still raw fish. Fish tend to harbor parasites, and they don't care what you call them. Not even the Pseudoterranova azarasi that was found frolicking in a Japanese woman's tonsil. She had gone to her doctor five days after dining on Sashimi, to find out why she had pain and irritation in the back of her throat. The bad news: it was a 38 millimeter long round roundworm, in its fourth stage of larval development. In the US, all fish sold for use as sushi has to be flash frozen first --- which kills parasites.
Avoid raw foods sold from kiosks or stands in markets. To me, they're suspect.

The raw is for bait used to catch the larger to cook and eat.
