My smoked turkeys never make it to dinner time. People pick at it till it's gone.
But I do smoke it over night so it is not reheated or cold.
I use 90% Apple wood and 10% Mesquite.

I have a charcoal smoker and use mesquite chips so I have to monitor the fire and feed it occasionally. Otherwise it will go out. That's a problem when smoking a turkey. It's hard to keep them lit.

Before I had a real smoker I used one of these on a Weber kettle grill, it it kept the temp for around 8 hours before I would need to add more wood. Wow, price almost doubled since I bought one. Tip Top Temp
