Mike M's Chicken Marinade 7/98 Ingredients: marinade
-1 cup of orange juice - 1/4 cup of olive oil - 1 Lemon cut-up
- 1 tablespoon of chopped garlic - 3 tablespoons of wet crushed red pepper (the bottled kind such as: Antonio's) - 1 tablespoon of honey - 1/8 cup of (dry) parsley - 1 teaspoon of sweet basil - 3/4 cup of burgundy (red) wine such as "Carlo Rossi" or any other el-cheapo wine ------------ -1 whole oven stuffer roaster chicken (4 - 6lbs) - carrots (quartered) - potatoes (quartered into 1" cubes) - any other kind of vegetable that you may wish to throw in there -------------- Directions: - mix marinade ingredients in a bowl - place the bird in roasting pan - place vegetables around the bird - pour marinade on bird & vegetables - oven roast bird as per directions (325 degrees 2-2 1/2 hours???) - I usually baste once about an hour into cooking (you may want to cover the bird for the first hour) ----------- - Prep time: 30 minutes (cutting of vegs & mixing marinade) - Roasting time: 2 1/2 hours (approximately) * prep time doubles if you sample the burgundy

I might add: - part-way through the baking process baste the bird and make sure that the vegs are submerged in the broth/liquid (btw; the bird will also add to the broth so no need to overfill the roasting pan with liquid when setting it up) - if you need to cover the bird part-way through the baking process, use foil
* I use a stone roasting pan but my friends had had success using a regular roasting pan
This recipe is a hit with my wife/kids.

Where I live, you never call a guy named Carlo Rossi cheap, you can get clipped for that!
