This morning I was in the kitchen whipping me up a breakfast, and WTH I was out of bread, so no toast with my bacon and eggs.
So I went into Auto Mode and my brain kicked out the idea of whipping up a few eggs and tossing in some crunched-up Ritz crackers and mixing that all together. I ground some pepper into it and added a dash of salt, and into the pan it went.
I cooked it like a frittata (started on the stove top and finished in the oven), and it came out like a crustless quiche. Quite light and delicious. You could toss anything into this recipe like chopped green onions, diced Spam, etc. Give it a try. Five or six crunched-up crackers with three eggs worked great.

That's a lot like what I do for breakfast on my days off. I can see where that is probably quite good. Open the fridge ... 3 eggs and anything else I can find to toss in the pan with them. Always turns out just fine. Disclaimer: One of my mottos in life; I've never cooked anything I couldn't eat yet.

Sounds good. Next time you're shopping for Ritz, try Savoritz Round Crackers from Aldi. Utterly identical and cheap. And the name cracks(!) me up.
