Some pedals have reverse-polarity protection in the form of a diode at the power jack. But some pedals don't have this, and you can completely toast a pedal by getting it backwards. Look closely at the label on the pedal wo see how the power input jack is configured. It will be either "center positive" or "center negative." Most pedals these days are center negative. Make sure the diagram on the power supply matches the diagram on the pedal--or the magic smoke may escape from your pedal.

You can also have someone make you a 'voltage starve' box that cuts output on a dial resistor - you may find that a better result that "x amount" on a device that doesn't have any adjustment when under load.
It's why my "signature" fuzz has its own starve control!
