My guitar has higher grade mini-pots on circuit boards on a Les Paul style control layout? In the past I would always mod the hell out of guitars but sometimes the difference isn't that noticeable. Were I to use full size pots would I really hear a difference?

Probably not. If the mini-pots are actually comparable values to their full-sized brethren, there would likely be no difference.

They're smooth, quiet, and the taper is good...played sloppy full sized pots that were expensive but felt even cheaper. They are of high quality, not some cheap ass/fall apart pots. Thanks for the advice, think I'll keep them but put paper in oil tone caps in. Put them in my Baja Telecaster and noticed a much richer, smoother tone.

Nah. The pots themselves won't be qualitatively different. Just being circuit board mounted doesn't mean much.
I've heard anecdotal evidence of ripping out guitar circuit boards, returning to PTP and hearing an improvement. It likely isn't the pots, though. I'm not sure what it is (or IF there even is a difference) but it would be something else entirely. Probably something sloppy that is just coming out in the wash when you redo everything.
